How to Chose the Right Knife for Your Kitchen

The right kitchen knives for the job will shorten your prep time, a lot. This will allow you to work faster and smarter. It also will help you prepare more high-quality ingredients and be a joy to use. So what makes a good knife? The main factors include: size, shape, quality and sharpness.

Size

Use a knife that are too small and you work harder than you need to. Use a knife that is too big and you will lose precision and control, and you work harder than you need to. Typically, you will find that a larger knife is better for chopping, dicing, mincing, and slicing. A smaller knife better suited to cutting, peeling and trimming small fruits. A medium sized knife if useful for slicing fruit and medium sized cuts of meat.

A good basic knife set contains a chef's knife, also called a cook's knife. While pros often recommend knife, 8 inch is a good sized house. 7 inches may be all that a shorter cook would want. Some cooks use Japanese style Santoku knife as a replacement for the European chef's knife style. A chef's knife is the most used blade in a professional kitchen and can be used for most food prep. A big knife that is often intimidating to cook at home but a bit of practice shows that it makes the job go much chopping quickly.

Chef's knife which is not suitable for fine work such as peeling. That's where a paring paring knife come in. Knives come in a range of sizes of 2-5 inches but the most common size is 3 to 3 January / 2 inches. Many home cooks use paring knife to chop to, but that's not what they were designed for. A paring knife is best used when the item being cut is held in hand. If a cutting board is used then a larger and heavier knife will do the job with less effort.

A bread knife should be long enough to cut a loaf of bread. For breads baked in pans or long, narrow loaf, 8 inches is enough. For the bread round, a 9 inch knife or longer is better.

Middle size 5-6 inches long knife is good for general work and often cook's furniture choices. Usually the knife is good for slicing or boning. A larger knife chef's will make quicker work of chopping. Knife in the middle range size is often called utility or sandwich knife, although some cooks prefer the thick edge of a short chef's or Santoku knives.

A good working minimum set of knives including chef's knife, a paring knife, a mid-sized utility knife or two and a bread knife. When preparing chicken, it's nice to have a knife dedicated to that work that does not contaminate the rest of the meal. The vast majority of the prep work can be easily accomplished with knives and a set of poultry shears. It is usually best to start with a higher quality set of small knives and add specialty knives as needed than to buy a large set and never use Some of the knives. Some cooks prefer the nice look of a matching set of knives. Some prefer to buy a knife they like best for each particular task.

If you work with a whole chicken or chicken after a 5-6 inch boning knife is a nice addition. A 6-7 inch fillet knife make short work of de-boning or filleting fish. A January 2 to 2 / 2 inch paring knife helps hard garnishes. While carving a good chef's will do to carve meat or chicken, a knife is not used for food prep are sharp and ready for carving at the table. 8-9 inches is a good general purpose size. The 10 inch knife is better for the prime rib and can double as a cake slicer, cutting the full width of the cake in a motion.

Shape

Knives with curved blades are the most versatile. Strapping benefit from a wider leaves, at least the end closest to the handle, or heel. Straight blade knife works well for slicing things like bread and roast beef. The traditional turkey carving is fairly straight.

Better quality knives hold their edge longer and are generally more durable. It used to be that only forged blades held high quality but that's not the case. While low-quality knives are all stamps, now days many quality knife is cut or stamped from sheet steel. Sharpness

A sharp, quality knife is a joy to use. However, a sharper edge is the more delicate it is. Sharpness comes from being extremely thin blade. If you buy an expensive knife extremely sharp edge and want it to last you need to take care of it. At the very least means without cleaning it in the dishwasher, cutting on a hard surface or unprotected storing knives in a drawer. It also means learning to touch up a knife steel or ceramic hone.

Any knife that quality should come from the factory with a sharp edge enough, although clever is a relative term. A $ 200 + Japanese knife can come with a scary sharp edge, while the $ 40 German one will have a "just" working sharp one. The tradeoff is one of durability as well as the ease of cutting. A very sharp knife edge is fragile and requires the same respect and care. A well-maintained knives will hold a working edge for quite a while, even when it finally gets too dull you may want to consider using a professional knife sharpening service to be restored to the side.
